It's BBQ Time!
In Colorado it seems like it's always BBQ time. Even when it's cold outside and you're burning your fireplace inside, a grill can be used like an oven. I like to prepare my meals in an aluminum pan covered with foil. I then set it on a rack system I made for my grill, and then I just let it cook till it's done. The meat melts in your mouth, and the potatoes crisp up like fries. It's a great meal with little effort, so it's good for busy schedules. Now keep in mind my grill is nothing fancy, it's just a grill, so any gas grill can be used, as long as it has a thermometer to adjust temperature.
Below are instructions for one of my favorite grill recipes, I hope you enjoy!
I buy boneless pork chops from Costco. They come about two inches thick and I cut them in half so they're about an inch thick. I also buy aluminum pans that fit my grill rack system, and that's what I cook in. I place the meat in the pan and add fresh veggies like garlic, onions, peppers, and potatoes. I cut the potatoes in about two inch wedges, I salt and pepper the food, add butter to the potatoes, cover it with foil, place it on the BBQ rack and cook it till it's done. Now keep in mind that the food should be placed on a rack above the grilling surface so the food won't burn on the bottom of the pan before it's done. I cook it at 350 degrees. It takes a little adjusting for the temperature, but once it's there I just let it cook, (typically about an hour or so for most meals prepared for up to four people). Please remember to cook your meats to proper temperatures for safe eating. The amount of food to prepare depends of course on how many people are eating. So it works great if you're eating alone or feeding a family.
